Step 2: Add mangoe pieces while mixing the powder mix. Continue to mix well after all mangoe pieces have been added
Step 5: Your AVAKAI is now ready, however cover the mix and leave aside for couple of days while mixing the avakai atleast once per day.

Mangoes - 2 (Cut Mangoe Pieces)
Salt - 3/4 Cup
Red Chilli Powder - 2 Cups
Musturd Powder (Ava Podi) - 1-1/2 Cup
Hing - Pinch
Turmeric Powder - Pinch
Fenegree Seeds (Methi Seeds) - 1 Tbsp
Oil - As Req'd
Process:
Your avakai will be ready for your enjoyment at the end of 3rd day. Howver you will realize the true taste only after the 5th day.
Store away in jar and away from direct sun light. This will remain good for more than a year provided you make sure no water droplets fall on it.
Additional Taste:
You can get added flavor to avakai by adding some garlic to the avakai mix thus prepared above. In Andhra this is called VELLI ULLI AVAKAI
Step 4: Mix well and leave it for 2 days
Step 5: Your Garlic AVAKAI is now ready.
